Panela Cheese

Panela Cheese is a pale and white fresh cheese but differs significantly from Queso Fresco It has a mild fresh cheese flavor but firm enough to slice well. It can be crumbled, but not as easily as Fresco. The cheese is made in 4 inch wheels, the outer surface of which are textured to resemble the texture imparted by the little baskets in which it was traditionally made.

This cheese is often diced or crumbled for salads, enchiladas and tacos but is also sometimes cut into slices and fried until lightly browned as a snack. When heated it softens moderately but holds it's shape, even until browned, exuding neither water nor oil.
