This is England's primary entry for blue cheese, but there is a much less well known White Stilton. The blue is strong smelling and quite pungent, with an edible moldy rind. "Stilton" cannot be made in the village of Stilton because it is outside the PDO region - theirs is called "Village Blue from Stilton". Stilton eaten before bedtime is reputed to produce strange and vivid dreams, confirmed by a 2005 study. Though used in a few soups, Stilton melts to an ugly crumbly liquid which never solidifies, and flavor is not improved by melting.
